Cooking for Shabbat – an introduction to Sephardi cuisine

In Jewish life, the dinner on Friday evening is an important part of everyday life. Shabbat starts at sunset and ends on Saturday evening. It is a time to meet and eat together even if the family is not very religious. There are many traditional recipes for the Shabbat dinner that are connected to the region a family lives in or comes from. Sephardi cuisine reflects its origin in North Africa, including the local spices and flavours into a rich variety of dishes. In this course, the cook Chen Cohen will introduce you to a set of dishes from his own family tradition. Participants will learn how to prepare a menu that plays an essential part in creating the special atmosphere of a Sephardi Shabbat dinner. This cooking course is taught in English only, but the teacher also speaks Hebrew and German.

Dieser Kurs ist Teil des neuen VHS open-Programms, das Lehrenden aus aller Welt ermöglicht, in ihrer Sprache an der Volkshochschule Kurse anzubieten. Er wird nur auf Englisch unterrichtet. Please bring an apron to protect your clothing as some spices can stain permanently. If you would like to drink anything else but tap water, please bring your own drinks. It is also advisable to bring small containers to take home any leftover delicacies. This course is part of the VHS open-program for new international teachers at the Volkshochschule Hamburg. While there is no course fee in this program, you need to pay a "Nutzungspauschale" for the food expenses. Please be aware that this is also due if you do not cancel two weeks in advance. You will receive a bill after the event.

Chen Cohen is a trained cook with a passion for international cooking. From European to North African and Middle Eastern cooking and baking he covers a great span of flavours and techniques. He is passionate for slow baking with yeast as well as the many dishes he learnt from his mother. Mr. Cohen came to Germany a few years ago and is cooking professionally in restaurants in Hamburg.
